Tidioute Cutlery knives are the standard line of Great Eastern. Their 1095 steel is custom heat treated for an edge that has maximum retention. Northfield UN-X-LD Cutlery knives are also 1095 based, and generally have a few more bells and whistles; such as blade swedges, lined / pinched / and slanted bolsters. Generally the Great Eastern Cutlery brand knives are 440C stainless, and also custom heat treated as well as any in the country.
